when disconnecting the c02 from my marker, is some air supposed to escape and is the vertical adapter (foregrip) supposed to get cold?

yes and yes. Also...if your bolt is cocked back when you dismount the tank, you WILL have at least one or 2 shots left in the gun so dry fire it with the barrel condom on it.

Co2 makes everything cold...foregrip, barrel, body, frame...everything. This is one of the reason why we say to get HPA tanks. Here's a link to a cheap, brand new, 47/3000 with a custom regulator for $50+shipping...the carbon fiber aren't bad either but they say "preorder" on the sales tags and I don't know what's up with that... 3rd one down is the aluminum tank I said...
