Anyone know where to find very short freak or AA fronts for the freak barrel system? I know I've seen 1 inchers or so around, but I don't know where to buy them.

There's a 1-inch tip produced by Doc's Machine. It's called the flashpoint.
You might want to email him first to see if he has any in stock.

I shoot a phantom with an 8inch barrel and it's no less accurate than one with an 11" barrel.

HDH is right, i think that it would be the same accuracy.

I think it would be less accurate/powerful, Paintballs in a high-pressure setup need about 5 inches to build up to their max speed, low-pressure needs even more.

Depending on the company, most recommend between 5-8" of unported length to allow the paintball to get up to speed. That is taken care of by the Freak back. The length of the tip really doesn't matter for velocity, since, as soon as the ball reaches the porting, it begins losing velocity. There might be a negligible difference in accuracy, but look at Druids review of his short tips, he was very satisfied with his accuracy.
I took a look at Doc's, I didn't see the tips offered on his store page, you can try to find one of the old WWA tips, or, the guy who made the tip that Druid used is jcurt454/jcurt455 depending on the forum. I've dealt with him before for other things, he's a great guy and makes very nice pieces.
